WDT tool

Fine needles to remove the ground coffee in the basket and unmake grumps. A cheap accessory that reduces the channelling.

€5–30

The WDT tool, which takes the name of the Weiss distribution technique, is a handle with several very fine needles. Before pressing, you remove the ground coffee inside the basket, in small circles, to break the grooves and distribute it evenly.

Many millers release the spicy coffee. If you press it like this, there are more dense and more loose areas, and the water goes down the easy ones. It is the channelling, which gives acid espresses and bitter at the same time.

  • In favour: cheap and very effective.
  • In favour: less channelling and more constant extraction.
  • Against: one more step in every coffee.
  • Against: the needles bend if you don't keep it well.

It costs €5-30. Look for 0.25-0.4 mm thick needles, a comfortable handle and a support to save it. It works better with a dosing funnel on the basket.

Cheaper alternative: a cork crossed by a few thin needles, or even a broken clip, is used to start.

This coffee bar runs on coffee… literally. And the odd ko‑fi.
