How to keep the coffee
Coffee loses aroma with air, light, heat and moisture. How to save the roasted grain, the ground coffee and the green coffee.
Toasted coffee is a fresh product. From the nut it loses aromas little by little, and oxygen, light, heat and moisture accelerate the process. Grounded, it makes it much faster.
For toasted coffee:
- Bean and grind right before you prepare.
- Keep it in your valve bag, well closed, or in an airtight and opaque container.
- Far from light, heat and fire; a fresh wardrobe is ideal.
- Enjoy it within 4-6 weeks of your stay.
- Buy amounts you'll spend in that time.
Fridge or freezer? The refrigerator, no: the moisture and the odors feel terrible. The freezer does serve to store coffee for months, with one condition: divulge it in single-dose portions, in hermetic containers, and take out only what you will use. What is thawed should not be returned to the freezer, because the condensation will damage it.
If you toss at home, green coffee also needs care, even if it holds much more:
- Between 15 and 25 ° C, in the dark and with an ambient humidity of 50-60%.
- In airtight bags, inside a jute bag or a closed box.
- Far from strong odors and never in the refrigerator, by condensation.
- Use it within 6-12 months of the harvest. After that time, the past harvest coffee tastes like paper or wood.
One last clue: a package without a date of tweets, only with a date of preferential consumption, can take many months toasted. Always look for your date.
