Method
It grabs 70 g of coffee to medium-fine milling and put it in the coffee chamber, on its filter. Levels it with a few punches.
Wet the coffee with about 50 g of cold water, removing so that no dry area remains. Place on top of the paper filter or the tower disk.
Without this step, the water opens roads and part of the coffee remains unextracted.
Fill the upper tank with the rest of the water, about 500 g, very cold. You can add cubes to keep it cold.
Open the valve and check it at one drop per second. Check it again at 15 minutes: it usually changes at first.
15 min
Let drip between 8 and 12 hours, at room temperature and away from the sun.
10 h
Serve the 1: 1 diluted concentrate with water or on ice. If you want, let it mature 1 or 2 days in the fridge in a closed bottle.
With the rest the taste is round and reminiscent of a liquor.
Tips and warnings
- If it drips faster, the coffee goes loose; if it stops, it opens the valve a little.
- Keep the concentrate in the fridge and take it in a week.
- The small towers cost €60-90; those of wood, €200-600 (guidance).
- No Kyoto tower: tap a small hole in the stopper of a bottle with cold water and place it face down on a cone with coffee; regulate drip with the size of the hole. Or prepare a cold brew dive in a jar or jar.
One last thing
One drop a second all night long. If you’ve had that much patience, a Ko‑Fi is a piece of cake.
