Sartén
Tasting coffee in a thick pan is free and teaches a lot. Tweet goes unevenly, but you see and hear every stage.
- Indicative price
- €0–30
- Capacity
- 100–250 g
You can toast green coffee in a thick background pan or in a wok, stirring without stopping with a wooden spoon. With 100-250 g of grain and medium heat, the nut lasts about 12-20 minutes. You'll see how it goes from green to yellow to brown, and you'll hear the first crack.
The heat comes only from the bottom, so the nut comes out uneven: some grains darker than others. Removing without stopping improves. At the end, it cools the grains quickly by passing them from one colator to another in front of a fan, and expects a weight loss of 15-18%.
- In favor: it costs nothing and you learn to recognize each stage.
- You can toast a little.
- Against: irregular and tired.
- Against: a lot of smoke and shell all over the kitchen.
Safety: put the bell to the maximum or feel in the open, never separate from the pan and have a fire extinguisher nearby. The husk and the dark nuts can light.
Any thick iron or steel frying pan serves, and a new cost up to €30. Cheapest alternative: the one you already have at home.
This coffee bar runs on coffee… literally. And the odd ko‑fi.
