No Filter from southern India? This works too
Method
Mix 18 g of medium-fine ground coffee with 4 g chicory and put it in the top chamber of the filter, that of the holes. Place the disc on top with handle and press barely.
Fits the upper chamber over the lower, pour 150 ml of water at 93 ° C on the disk and cap.
Let drip between 10 and 30 minutes without touching it: the decoction slowly falls into the lower chamber.
20 min
If you drip in less than 10 minutes, press the coffee a little more next time.
Meanwhile, it leads to boiling 360 ml of milk and remove it from the fire.
In each glass put 1 teaspoon of sugar and about 20-25 ml of decoction, and complete with 100-120 ml of hot milk.
Never boil the decoction: bitter and loss of aroma.
Pour the mixture of the glass to the dabarah and return, from about 30-40 cm high, 3 to 5 times, until it makes foam. Pour it in the glass, inside the dabarah.
Tips and warnings
- The traditional mixture goes from 80 / 20 to 70 / 30 coffee and chicory; if you don't have chicory, use 22 g only coffee.
- The decoction that holds one day in the refrigerator; heat it to the bathroom, without boiling.
- Verter from the top splash and burn: start at low height and go up.
- No filter from southern India: a Vietnamese phin or an Italian coffee maker give a similar strong decoction.
One last thing
From the glass to the dabarah, from the dabarah to the glass… and, in between, perhaps a ko‑fi.
