The southern Indian filter has two steel cylinders that fit. The top one, with the bottom pierced, carries the coffee; the bottom one collects the decoction. A mango disc, like a small umbrella, slightly tightens the coffee. Hot water drips very slowly and a thick concentrate comes out.
A mixture of coffee and chicory is used between 80 / 20 and 70 / 30: about 20-25 g for 150 ml of water at 90-95 ° C. It'll be 10 to 30 minutes. For the kaapi filter, 20-25 ml of decoction with 60-150 ml of boiled milk and sugar are served, and it is passed from the glass to the bowl several times from 30-40 cm to make foam. Decoction should never boil.
- In favor: cheap, unbreakable and paperless.
- In favor: the decoction gives for several cups.
- Against: very slow.
- Against: The result depends a lot on the mixture and pressure of the disk.
A steel filter costs €8-20, and the glass and bowl set (tumbler and dabarah), €8-15. Choose thick stainless steel and a size for 2-4 cups.
Cheapest alternative: a Vietnamese phin makes a similar concentrate; a moka, a strong coffee to mix with milk.
This coffee bar runs on coffee… literally. And the odd ko‑fi.
