Summary
Guacamole the traditional way: ripe avocado mashed by hand with onion, chilli, coriander and lime. Ten minutes to make and best eaten straight away, with tortilla chips or in tacos.
Ingredients
- 1 u Tomato (ripe but firm, seeded (optional)) (optional)
- 0.5 u Onion (white, very finely chopped)
- Salt (to taste)
- 1 u Green Chilli (serrano or jalapeño, finely chopped)
- 1 handful Coriander (fresh, chopped)
- 3 u Avocado (ripe)
- 2 tablespoons Lime juice (from about 1 lime)
Instructions
Pound a little of the onion, half the chilli, half the coriander and a pinch of salt in a mortar (or mash them in a bowl with a fork) into a moist paste. This spreads their flavour through the whole guacamole.
3 min
Halve the avocados, remove the stones and scoop out the flesh with a spoon. Add it to the mortar and mash, leaving small chunks.
3 min
Stir in the rest of the onion, chilli and coriander, the diced tomato if using, and the lime juice. Mix gently.
2 min
Taste and adjust the salt, lime or chilli: it should taste fresh with a sharp edge. Serve at once with tortilla chips or alongside tacos and grilled meat.
Notes
Choose avocados that give slightly when pressed with your thumb but aren't soft. In Mexico it is mashed in a molcajete (a volcanic stone mortar), but a fork and a bowl work too: the point is to leave small chunks rather than make a smooth purée. If you have leftovers, press cling film onto the surface so it doesn't brown and eat it the same day; leaving the stone in the bowl won't stop it turning dark. Without tomato it tastes more intense and keeps better.
