Summary
The quintessential Turkish breakfast: eggs gently scrambled in a sauce of tomato and green pepper with butter and pepper flakes, served in the pan for dipping bread.
Ingredients
- Bread (to serve)
- 20 g Butter
- 4 u Egg
- 3 u Tomato (very ripe, peeled and chopped)
- 0.5 u Onion (chopped) (optional)
- Salt (to taste)
- 1 teaspoon Pul Biber (or chilli flakes)
- 1 tablespoon Extra Virgin Olive Oil
- 2 u Green Pepper (long, Italian-style, sliced into rings)
- 1 handful Parsley (chopped)
Instructions
Heat the butter and oil in a medium frying pan. Fry the onion, if using, and the green pepper until soft.
6 min
Add the tomatoes with a pinch of salt and cook until they break down and almost no liquid is left.
8 min
Crack the eggs straight into the sauce, sprinkle with the pul biber and stir gently just a few times, so they only half mix.
Cook over low heat until the eggs are set but still soft. Scatter the parsley over and serve in the pan, with bread.
3 min
Notes
Turkey has an endless debate over whether menemen should include onion: both versions are authentic. Barely mix the eggs so streaks of white and yolk remain, and take it off the heat while still soft. Turkish peppers (sivri) are thin and mild; long Italian green peppers are a good substitute.
