Summary
The Lebanese bread salad: lettuce, tomato, cucumber, radish and fresh herbs with pieces of crisp pitta, dressed with lemon, sumac and pomegranate molasses.
Ingredients
- 3 u Tomato (diced)
- 1 clove Garlic (grated)
- Salt (to taste)
- 6 tablespoons Extra Virgin Olive Oil
- 3 tablespoons Lemon Juice
- 1 bunch Parsley (leaves)
- 1 handful Mint (leaves)
- 3 u Spring Onions (sliced)
- 1 u Cucumber (diced)
- 1 u Lettuce (romaine, torn)
- 6 u Radish (thinly sliced)
- 2 u Pita Bread (a day old)
- 1 tablespoon Pomegranate Molasses
- 2 teaspoons Sumac
Instructions
Preheat the oven to 200 °C. Split the pittas, cut them into pieces, brush with 2 tablespoons of oil and toast until golden and crisp.
8 min
For the dressing, mix the lemon juice, pomegranate molasses, garlic, half the sumac, salt and the rest of the oil.
Put the lettuce, tomato, cucumber, radish, spring onion, parsley and mint in a large bowl.
Just before serving, add the toasted bread and dressing, toss and sprinkle with the remaining sumac.
Notes
It was born as a way to use up day-old pitta. Add the bread just before serving so it stays crisp. Sumac, a red, tangy spice, is sold in Middle Eastern shops; if you have no pomegranate molasses, use a little more lemon with a pinch of sugar.
