Summary

Yucatán pork marinated in achiote and orange juice, wrapped in banana leaves and roasted very slowly until it falls apart. Served in tacos with pickled red onion and habanero.

Ingredients

8 servings
Add to Bring!
  • 4 cloves Garlic
  • Salt (to taste)
  • 2 u Red Onions (thinly sliced, for pickling)
  • 3 u Lime (juiced)
  • 1 u Habanero Pepper (chopped, to taste)
  • 1 teaspoon Ground Cumin
  • 2 leaves Banana Leaves (large)
  • 1 teaspoon Oregano (dried)
  • 1.5 kg Pork Shoulder (boneless, in large chunks)
  • 3 u Orange (juiced)
  • 16 u corn tortillas
  • 100 g Achiote Paste

Instructions

  1. The night before, blend the achiote paste with the juice of two oranges and two limes, the garlic, cumin, oregano and a teaspoon of salt. Rub the mixture all over the pork, cover and leave to marinate in the fridge.

  2. Preheat the oven to 160 °C. Pass the banana leaves quickly over a flame or a hot pan to soften them and use them to line a deep dish.

    5 min

  3. Put the pork and all the marinade on the leaves, fold them over the top and cover the dish tightly with foil.

    5 min

  4. Roast until the meat falls apart with a fork.

    4 hr

  5. Meanwhile, make the pickled onion: mix the onion with the juice of the remaining orange and lime, the habanero and a pinch of salt and leave it until it turns pink.

    30 min

  6. Shred the pork in its juices and serve in warm tortillas topped with the pickled onion.

    10 min

Notes

In Yucatán it is cooked in a pib, an underground oven; a home oven, tightly covered, gives a very similar result. Seville (bitter) orange is traditional: if you cannot find it, mix sweet orange and lime juice. Marinate the meat the night before. Banana leaves are sold frozen in Latin American or Asian shops; without them, wrap in baking paper and foil.
