Summary

An easy recipe for 1 serving. It takes about 5 minutes to make. Each serving has about 652 kcal. It is vegetarian.

A single-serving chocolate cake made in a mug in the microwave: mix it with a fork and it is ready in just over a minute, soft and with a molten chocolate centre.

Ingredients

1 servings
  • 4 tablespoons Wheat flour (level (about 30 g))
  • 4 tablespoons Milk
  • 1 pinch Salt
  • 3 tablespoons Sugar (level)
  • 0.25 teaspoons Baking Powder
  • 2 tablespoons Sunflower Oil (or melted butter)
  • 15 g Dark Chocolate (in squares or chunks) (optional)
  • 2 tablespoons Cocoa Powder (unsweetened)

Instructions

  1. In a large microwave-safe mug, mix the flour, sugar, cocoa, baking powder and salt with a fork, breaking up any lumps of cocoa.

    1 min

  2. Add the milk and oil and beat with the fork, scraping the bottom and edges of the mug well, until the batter is smooth with no dry flour left.

    1 min

  3. Push the chocolate into the middle of the batter, without letting it reach the bottom.

  4. Microwave at 800 W for 70 seconds (55 seconds at 1000 W; 90 seconds at 700 W). It should have risen and the top should be set, with the centre still slightly moist; if it is still runny, add 10-second bursts.

    2 min

  5. Leave it to rest for a minute before eating, as the mug and chocolate are very hot. Eat it straight from the mug, on its own or with a scoop of ice cream.

Notes

The timing depends on your microwave's power, usually shown on a label inside the door or in the manual: at 800 W, about 70 seconds; at 1000 W, about 55; at 700 W, around 90. Start with the shorter time and add 10-second bursts if needed: the mug cake keeps cooking in its own heat once out, and a few seconds too many leave it dry and rubbery. It is done when it has risen and the top looks set, even if the middle is still slightly moist; it is normal for it to sink a little as it cools. This version has no egg, because a whole egg for a single portion gives a rubbery texture. Use a microwave-safe mug of at least 350 ml and fill it no more than halfway, as it rises a lot. If you use self-raising flour, leave out the baking powder. With plant milk and dairy-free chocolate it is vegan. Eat it warm, within a few minutes: it firms up as it cools. It is wonderful with a scoop of vanilla ice cream. The chocolate may contain traces of nuts.
