Summary
An easy recipe for 4 servings. It takes about 62 minutes to make. Each serving has about 777 kcal. It is gluten-free, dairy-free, nut-free and sugar-free.
Whole chicken legs, bone in and skin on, rubbed with smoked paprika, garlic and oregano and roasted in the air fryer until the skin crackles. Plenty of flavour for five minutes of work, and no need to turn on the oven.
Ingredients
- 1 tablespoon Olive oil
- 1 u Lemon (cut into wedges, to serve)
- 1.5 teaspoons Salt
- 0.5 teaspoons Black pepper (ground)
- 1 teaspoon Oregano (dried, or thyme)
- 4 u Chicken Legs (whole, bone in and skin on (about 1.2 kg))
- 1 teaspoon Garlic Powder
- 2 teaspoons Smoked Paprika (sweet, or mixed with a little hot)
Instructions
Take the chicken legs out of the fridge 20 minutes beforehand. Pat them very dry all over with kitchen paper, including under the skin, and make two deep cuts down to the bone in the meatiest part so they cook evenly.
20 min
In a small bowl, mix the paprika, garlic powder, oregano, salt and pepper. Rub the legs with the oil and then with the spice mix on all sides, working a little under the skin.
5 min
Preheat the air fryer to 190 °C for 3 minutes. Put the legs in the basket skin side down, in a single layer and not touching (if they do not fit, cook them in two batches).
3 min
Cook for 12 minutes at 190 °C. Turn them with tongs so the skin faces up and cook for another 12 minutes at 190 °C.
24 min
Turn the heat up to 200 °C and cook for 3-5 more minutes, until the skin is deep golden and crisp. Check with a thermometer: they should read at least 74 °C in the thickest part and ideally 80 °C next to the bone. If they are not there yet, keep cooking in 3-minute bursts.
5 min
Let the legs rest for 5 minutes out of the basket, uncovered so the skin stays crisp, and serve with the lemon wedges.
5 min
Notes
Chicken legs with a dry spice rub are an everyday dinner in the United States, somewhere between barbecue and roast chicken. Crisp skin depends on dry skin: pat it dry with kitchen paper and, if you have time, salt the legs and leave them uncovered in the fridge from the morning or the night before; the salt seasons the meat and the skin dries out. A teaspoon of baking powder (not bicarbonate of soda) mixed into the spices also helps the skin crisp up. Food safety: the chicken must reach at least 74 °C in the thickest part without touching the bone; with bone-in pieces, ideally take it to 80 °C next to the bone, as leg meat becomes more tender and no longer looks pink. Without a thermometer, pierce next to the bone: the juices should run clear. The size of the pieces and your air fryer model make a big difference to the timing: with thighs only, allow about 18-20 minutes in total; in small air fryers cook 2 legs per batch, and in oven-style models put them on the middle rack. In a conventional oven, roast them on a rack at 200 °C (fan) for 40-45 minutes, skin side up. They keep for 3 days in the fridge and freeze well once cooked for up to 3 months; reheat them in the air fryer at 180 °C for 6-8 minutes, skin side up. Variations: add cumin and a pinch of cayenne to the rub, or brush the legs with a thin layer of barbecue sauce for the last 3 minutes.
