Summary
A medium-difficulty recipe for 6 servings. It takes about 73 minutes to make. It is gluten-free, dairy-free and nut-free.
A whole sea bream roasted on a bed of sliced potatoes and onion, with lemon slices tucked into cuts along its back, and finished with a sizzling garlic and chilli oil. The fish for Christmas Eve dinner in Madrid and along Spain's northern coast.
Ingredients
- 2 u Onion
- 6 cloves Garlic
- 1 kg Potato
- 1 u Lemon (thinly sliced)
- 100 ml White wine (dry)
- Salt (to taste)
- 150 ml Extra Virgin Olive Oil (6 tablespoons for the potatoes, a drizzle for the fish and the rest for the garlic oil)
- 2 tablespoons Parsley (fresh, chopped)
- 1 tablespoon White Wine Vinegar
- 100 ml Water
- 1 u Chilli pepper (dried)
- 2 u Blackspot sea bream (1 kg each, gutted and scaled, head on, or gilthead bream or snapper)
Instructions
Preheat the oven to 190 °C (conventional). Peel the potatoes and slice them 5 mm thick; peel the onion and slice it thinly.
10 min
Spread the potatoes and onion over a large roasting tray, season with salt, pour over 6 tablespoons of the oil and the water and toss with your hands. Bake until half cooked and starting to brown at the edges.
25 min
Meanwhile, pat the fish dry inside and out with kitchen paper and season with salt. Make three diagonal cuts down to the bone on the upper side of each fish and tuck half a lemon slice into each cut.
10 min
Lay the fish on the potatoes, drizzle with a little oil and pour the wine around them. Roast until the eyes turn white, the dorsal fin pulls out easily and the flesh next to the backbone is opaque.
22 min
While they roast, peel and thinly slice the garlic and cut the chilli into rings, removing the seeds if you want it mild. Heat the rest of the oil in a small frying pan over a medium-low heat and fry the garlic and chilli until pale golden. Take off the heat and add the vinegar carefully, as it spits, then the parsley.
6 min
Take out the tray, pour the piping-hot garlic oil over the fish and bring it to the table straight away. Serve the fillets off the bone with the potatoes and a little of the juices from the tray.
Notes
It is the Christmas Eve dish in many homes in Madrid and along the Cantabrian coast, where winter besugo (blackspot sea bream) has always been considered the finest fish for dinner on 24 December. Today it is scarce and expensive, so order it from the fishmonger in good time; the usual substitute is gilthead bream (dorada), and snapper (pargo) works too. Allow about 350 g of whole fish per person, as the head and bones account for much of the weight, and ask for it to be gutted and scaled with the head left on. The cuts along the back help the heat reach the thick part evenly and hold the lemon in place. It is done when the eye has turned white, the dorsal fin pulls out easily and the flesh next to the backbone is opaque and comes away without effort; overcook it and it turns dry. For 600 g fish, allow about 15 minutes in the oven instead of 20 to 25. The garlic oil, which many families call ajada or ajillo, is made at the very last moment and poured over piping hot so it sizzles on the skin. Plan for the evening: slice the potatoes and onion in the afternoon and keep the potatoes covered in cold water, draining and drying them well before use; have the garlic and chilli sliced and ready. Baked fish does not reheat or freeze well: any leftovers, flaked and boned, keep for a day in the fridge and are good in scrambled eggs.
