Roast levels
From cinnamon to Italian roast: temperatures, flavours, resting and the brewing method that suits each roast.
Cinnamon
The clearest tweets: it stops at the beginning of the first crack. Very acid, with notes of cereal and grass; it is usually little developed.
193–198 °CSure
Of course it ends during the first crack. Brilliant, floral and true to the origin: the favorite for filter coffee.
202–207 °CCity
Your medium ends at the end of the first crack. Balanced and sweet, with a clear acidity: a great starting point.
210–219 °CCity +
A little beyond the first crack. More candy and more body without losing the fruit: it serves for filter and for a clear espresso.
219–224 °CFull City
Middle-dark, on the edge of the second crack. Chocolate, candy and nuts with little acidity: very espresso and moka.
223–227 °CVienna
Dark robe, in the middle of the second crack. Aroduce, roasted and spicy, with oil stains. Ideal for drinks with milk.
228–232 °CFrench
Very dark and oily, at the end of the second crack. Smoked, with burned sugar and less body. Better with milk.
237–242 °CItalian
The darkest: beyond the second crack, almost black. It tastes especially like coal and ash; we don't recommend it.
243–248 °C
This coffee bar runs on coffee… literally. And the odd ko‑fi.
