Summary
An easy recipe for 4 servings. It takes about 31 minutes to make. Each serving has about 494 kcal. It is nut-free and sugar-free.
The Roman classic with just three ingredients: pasta, pecorino and black pepper, brought together with the pasta water into a smooth, peppery cream. We explain the trick to stop the cheese going lumpy.
Ingredients
- Salt (a little, for the pasta water)
- 2 teaspoons Black pepper (whole peppercorns)
- 360 g Spaghetti (thick, or tonnarelli)
- 160 g pecorino (Romano, very finely grated)
Instructions
Take the pecorino out of the fridge ahead of time and grate it very finely on the small holes of a grater. Crush the peppercorns in a mortar so they are coarse and uneven.
5 min
Bring about 2 litres of water to the boil in a wide pot with very little salt. Cook the pasta for two minutes less than the packet says.
18 min
While it cooks, toast the pepper in a large dry frying pan over medium-low heat until fragrant. Add a ladle of the pasta water and let it simmer gently: this is the base of the sauce.
2 min
Make the cheese paste: put the pecorino in a bowl, add 3 or 4 tablespoons of pasta water that you have left to cool for a minute and mix with a fork into a smooth, thick paste, like an ointment.
2 min
Lift the pasta into the pepper pan with tongs, along with a little more water. Finish cooking over medium heat, stirring, until al dente and the liquid has reduced and thickened with the starch.
2 min
Take the pan off the heat and wait half a minute. Add the pecorino paste and toss the pasta vigorously with the tongs, adding splashes of water, until the sauce is creamy, glossy and free of lumps. Serve at once on warm plates with a little more pecorino and pepper.

Notes
Cacio means cheese in the dialect of Rome and Lazio, and here it is always pecorino romano, an aged, salty sheep's cheese. With so few ingredients, the usual failure is clumping: the proteins in pecorino tighten above about 65 °C, squeeze out the fat and turn into sticky strings. There are three ways to avoid it: grate the cheese very finely and at room temperature, turn it into a paste first with warm (not boiling) pasta water, and add it off the heat once the pan has rested for half a minute. Starch helps too, which is why the pasta is cooked in little water. If the sauce splits, add a tablespoon of cold water and toss hard; it can sometimes be rescued. Some cooks add a knob of butter or a splash of oil to the pan as insurance; it isn't traditional, but it works. The classic pasta is tonnarelli, though thick spaghetti or bucatini are very good. Pecorino is very salty, so go easy on the salt in the water. It is made with animal rennet, so for a vegetarian version use an aged sheep's cheese made with vegetable rennet. Eat it straight away: reheated, it loses its creaminess.
